● Chicken wings
● Soy sauce (for marinade)

● Brant Lake Platinum Wagyu tomahawk steak (or premium wagyu beef)
● Seasoning salt (Lawry’s or similar)
● Fresh ground black pepper
● Beef tallow (for cooking)
● Butter lettuce leaves
● Tomatoes, sliced
● Onions, sliced and caramelized in beef tallow
● Pickles
● Honey-infused Sriracha (optional)
● Brioche or bao-style burger buns
● Cheese (Provolone used in the video)
● Potatoes, hand-cut
● White vinegar
● Ice water
For the Fries
● Cooking oil for frying (beef tallow preferred for flavor)
Instructions
1. Wings (optional starter)

Marinate wings in soy sauce.

Dust lightly with flour.

2. Fries

Cut potatoes by hand.

Place in cold water with a splash of vinegar.

Bring to a boil and cook for 10 minutes.

Shock in ice water, drain, and let rest.

Fry for 5 minutes, remove, rest briefly, then fry a second time until golden and crunchy.
3. Burger Patties

Trim the wagyu tomahawk steak off the bone and cut into cubes.

Grind the beef fresh. Do not add filler.

Heat beef tallow on a flat top or skillet.

Cook patties, seasoning with salt and pepper during the sear.
