2 Mazza Chicken Parm
Ingredients
For the Chicken:

4 chicken breasts (pounded evenly)

1 cup all-purpose flour

2 eggs, beaten

2 cups panko breadcrumbs

Oil for frying (use a deep fryer set to 375°F)

Salt and pepper to taste

2 cups shredded mozzarella cheese
-
½ cup grated Parmesan cheese
For the Marinara Sauce (homemade):

2 cans DOP tomatoes
-
1 bulb of garlic, minced
-
1 onion, finely chopped
-
7 basil leaves, chopped
-
½ bottle red wine
-
2 cups chicken broth
-
1 can tomato paste
-
4 tbsp honey
-
Salt and pepper to taste
Instructions
1. Make the Marinara Sauce:

Heat olive oil in a large saucepan. Add garlic and onion, cooking until softened and fragrant.

Stir in tomato paste and let it caramelize slightly.

Pour in red wine, allowing the alcohol to cook out.

Add the DOP tomatoes (crushed by hand or blended), chicken broth, honey, basil, salt, and pepper.

Let the sauce simmer on low heat for 30–40 minutes until thick and rich.
2. Prepare the Chicken:

Season chicken breasts with salt and pepper.

Dredge each piece in flour, dip into beaten eggs, then coat in panko breadcrumbs.

Fry the breaded chicken in the deep fryer at 375°F until golden brown and cooked through (about 5–6 minutes depending on thickness). Remove and drain on paper towels.
3. Assemble the Dish:

Preheat oven to 400°F.

Place fried chicken breasts on a baking tray. Spoon marinara sauce generously over each piece.

Sprinkle mozzarella and Parmesan cheese on top.
