2 Mazza Chicken Parm

2 Mazza Chicken Parm

Introducing the 2 Mazza Chicken Parm — a crispy golden chicken cutlet fried to perfection, topped with rich house-made marinara, bubbling mozzarella, and a hit of Parmesan that melts right into every bite. It’s comfort food, but turned all the way up.

And tonight, it comes with a twist — crafted by Chef2K and served with a co-sign from special guest Smiley of OVO. Just like Smiley’s flow, this dish has layers: smooth, bold, and unforgettable. Pairing Toronto flavor with Italian soul, the 2 Mazza Chicken Parm is more than a meal — it’s an anthem on a plate

2 Mazza Chicken Parm

Ingredients

For the Chicken:

  • 4 chicken breasts (pounded evenly)

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • 2 cups panko breadcrumbs

  • Oil for frying (use a deep fryer set to 375°F)

  • Salt and pepper to taste

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

For the Marinara Sauce (homemade):

  • 2 cans DOP tomatoes

  • 1 bulb of garlic, minced

  • 1 onion, finely chopped

  • 7 basil leaves, chopped

  • ½ bottle red wine

  • 2 cups chicken broth

  • 1 can tomato paste

  • 4 tbsp honey

  • Salt and pepper to taste

Instructions

1. Make the Marinara Sauce:

  1. Heat olive oil in a large saucepan. Add garlic and onion, cooking until softened and fragrant.

  2. Stir in tomato paste and let it caramelize slightly.

  3. Pour in red wine, allowing the alcohol to cook out.

  4. Add the DOP tomatoes (crushed by hand or blended), chicken broth, honey, basil, salt, and pepper.

  5. Let the sauce simmer on low heat for 30–40 minutes until thick and rich.

2. Prepare the Chicken:

  1. Season chicken breasts with salt and pepper.

  2. Dredge each piece in flour, dip into beaten eggs, then coat in panko breadcrumbs.

  3. Fry the breaded chicken in the deep fryer at 375°F until golden brown and cooked through (about 5–6 minutes depending on thickness). Remove and drain on paper towels.

3. Assemble the Dish:

  1. Preheat oven to 400°F.

  2. Place fried chicken breasts on a baking tray. Spoon marinara sauce generously over each piece.

  3. Sprinkle mozzarella and Parmesan cheese on top.

  4. Bake for 10–12 minutes until cheese is melted, bubbly, and golden.

4. Serve:
Plate the 2 Mazza Chicken Parm with extra marinara on the side. Serve with pasta, garlic bread, or a fresh salad.
